Our family has embarked on a clean eating journey. I can't stomach the thought of eating eggs for breakfast every day, so I decided to give these pancakes a try. I found quite a few variations, but these ones sounded the easiest to me. I added a dash of vinegar to give them a buttermilk type of taste, and a dash of vanilla extract. When I eat regular pancakes, I am hungry an hour later. When I eat these, I am full until lunch time! Amazing!!
Yield 6 pancakes
1/2 C oats (I used old fashioned)
1/2 C cottage cheese
1/2 Tsp vanilla extract
1/2 Tsp vinegar (apple cider or white)
Instructions: Put all ingredients in a blender and thoroughly mix. Pour onto pancake griddle and cook.Top with sugar free syrup, almond butter, or bananas, or berries! My favorite combo right now is almond butter and bananas.
These little beauties taste amazing and are packed with protein!!
