Last year I attempted to make "microwave peanut brittle"..... I'm here to tell you that I failed miserably, like rip out filling (tooth) miserable! I didn't get it cooked to the right temp, so it quickly made its way to the garbage! I found this recipe on All Recipes and it's a winner! Took less than 20 minutes to make, and Rex had the pan gone before I was able to deliver it! This would make a great holiday gift for neighbors or co-workers!
Easy Peanut Brittle
1 cup sugar, white
1/2 cup corn syrup, light colored
1/4 tsp salt
1/4 cup water
1 cup peanuts, raw
2 TBSP butter, softened
1 tsp baking soda

Grease a large cookie sheet with butter. Set aside.
In a heavy saucepan, over medium heat, bring to boil sugar, corn syrup, salt, and water. Stir until sugar dissolves. Stir in peanuts. Set candy thermometer in pan and continue cooking. Stir frequently until temperature reaches 300-310 degrees Fahrenheit. Remove from heat; immediately stir in butter and baking soda; pour at once onto buttered cookie sheet. With two forks or a sharp knife, lift and pull peanut brittle to desired thickness. Cool and break into pieces.
