I can honestly say that I don't think there is anything better than a fresh hot doughnut. I can also honestly tell you that my family has hold of the best spudnut recipe on planet earth. They are easy to make, but do require a time commitment. They make a great Sunday or holiday treat. You'll need around 3 hours to whip these babies up.
1 C. Milk, Scalded
1/2 C. Shortening
1/2 C. White Karo Syrup
!/2 C. White Sugar
1 Tsp. Salt
1 Egg, Beaten
1 Tbs. Yeast, dissolved in 1/2 C. Warm Water
1/2 C. Mashed Potatoes (1-2 small potatoes will be plenty)
1/2 C. Potato Water
5-6 C. Flour
Scald milk. I put mine in the microwave for 5 minutes. Add milk to shortening, sugar, karo, and salt. Mix and when lukewarm, add the yeast mixture. Add beaten egg, mashed potatoes, and potato water to mixture. Mix, then add flour gradually until dough is stiff leaves the side of the bowl. Knead dough for 5 minutes, then move to an oiled bowl. Let it rise until it has tripled in size. Mine took 2 hours. Roll dough out until it is 1/3'' thick on a floured surface. Cut out doughnuts and allow to rise for another hour. Heat oil and fry doughnuts. Place on a paper towel to get off excess oil, then immediately dip in glaze. **Use an electric egg beater when mashing your mashed potatoes so they are smooth and not lumpy.
1 1/2 C. Powdered Sugar
1/2 C. Evaporated Milk, warmed in microwave
1/2 Tsp. Vanilla Extract
1/4 C. Melted Butter
Pinch of salt
Add all ingredients to a bowl and mix well until smooth.
