I love dinners that I can make in one pot, and fast! I usually have all the ingredients on hand for corn chowder, so it is a go to recipe for me when I want something easy!
Recipe: Serving size: 4 adults Cook Time: 30 Minutes
4 small potatoes or 2 large potatoes
1 whole yellow or white onion
1 bag of frozen corn
2 Tbsp. Butter
1 C. Heavy whipping cream (you can omit the cream and just use milk if you prefer)
1 C. Milk
4 C. Vegetable or chicken broth
1 Clove garlic
Salt and pepper to taste
Instructions: Peel potatoes and dice, Set aside. Chop onion. Saute onions and garlic in butter until onions soften, about 7 minutes. Coat garlic and onions with flour and stir. Add broth, milk, cream, and potatoes. Simmer until potatoes soften. Add frozen corn and cook for 5 more minutes until corn is thawed. (If you use raw corn you will want to cook it longer until the corn is cooked. The frozen corn I use is from Sams Club and it is precooked so it just has to be thawed in the soup.) Salt and pepper to taste.
